Courtney’s Barbeque Chicken Salad


  • Left Over Barbequed Chicken – (shredded or chopped)
  • ¼ Cup Celery – Chopped
  • ¼ Cup Red Onion – Chopped
  • ¼ Cup Red Pepper – chopped very fine
  • 2 – 3 Tablespoons Sweet Pickle Relish
  • ¼ Cup Mayonaise  - (approx amount.  Depends on chicken amount)
  • 1 Tablespoon Dijon Mustard
  • 2 Teaspoons dried taragon
  • ½ Teaspoon Salt
  • 1 Teaspoon Pepper
  • 2 Hard Boiled Eggs – Chopped (Optional)

ALL AMOUNTS ARE ADJUSTABLE ACCORDING TO INDIVIDUAL TASTES

Combine all ingredients and refrigerate over night.  Serve on bread with Mayo or Miracle Whip. 

Barbeque Chicken Salad Melt
Take one English Muffin side and top with chicken salad from above. and place swiss cheese on top.  Broil on high for 5 minutes or until cheese is bubbly.  Use Knife and fork to eat with.  Cook four sides at one time and serve with Tomato Soup.  Makes a great Dinner.
