Dillon’s Black & White Turkey Chili


  • ½ Fully Baked 6lbTurkey Breast – Shredded (Use the other breast for sandwiches!)
  • 1 ½ lbs Poultry Sausage - Hot
  • 1 Package Turkey Kielbasa
  • 3 Mediums Onions – Coarsely Chopped
  • 1 Package McCormick Chili Seasonings – Mild
  • 1 Can 28oz Crushed Tomatoes
  • 1 Can 28oz Tomatoes – Peeled
  • 1 Can Rotel Diced Tomatoes and Green Chilies
  • 2 Cans Tomato Paste – small can
  • 2 Tablespoons crushed Red Peppers
  • 2½ Cups Chicken Stock
  • 1 Tablespoon Liquid Smoke
  • 1 Tablespoon Texas Pete Hot Sauce
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Ketchup
  • 2 Tablespoons crushed Garlic
  • 1 Teaspoon Onion Powder
  • 1 Tablespoon Dried Oregano
  • 2 Tablespoons Chili Powder
  • 1 Teaspoon Ground Cumin
  • ½ Cup Brown Sugar
  • Pinch of Cayenne
  • 1 Teaspoon Paprika
  • 1 Teaspoon Salt
  • Pinch of Black Pepper
  • 2 Cans - 15.5oz. Black Beans - Drained
  • 2 Cans - 15.5oz. Great Northern White Beans - Drained

Chop Onions and in large skillet, caramelize with olive oil; once done place in large cooking pot.  Take skin off of poultry sausage and brown in large skillet:  Once brown add to pot with onions. Chop Kielbasa into small pieces and sear on high heat for 2-3 minutes.   Once seared, add to pot with sausage and onions.

Deglaze pan with ¼ cup of water to get drippings up from bottom of pan and stir around.  Add water and drippings to pot.

Open can of whole peeled Tomatoes and put in pot with sausage, onions and kielbasa.   Take hands and crush tomatoes with hands. Add McCormick’s seasonings and stir well. 

Add crushed Tomatoes, garlic, liquid smoke, Worcestershire sauce, chili powder, cumin, ketchup, brown sugar, chicken stock, paprika and cayenne. Take skin off turkey, shred and add to pot; Turn stove on to low heat; bring to low simmer.  Continue to cook for 2 hours only occasionally.  Add Beans and cook for another hour on very low heat.  Stir once or twice.  (Turkey and Beans will break up by over stirring.)

Serve warm, over rice with butter, topped with Extra Sharp Cheddar Cheese.
